Microwave Penda

Penda = Indian sweet made of milk powder

Penda are traditionally made to celebrate a special occasion like an engagement, wedding, birth of a child etc. It’s something you give to people to share in the joy of a special life moment.

Penda made the traditional way takes time, but here’s a microwave recipe that’s quick and easy, and taste amazing!

Ingredients (to make 25 medium sized penda)

  • 1 tub of double cream (170ml)

  • 3 tubs of milk powder (use the empty double cream tub, washed and dried as your measuring guide)

  • 1/4 tub of sugar (use the empty double cream tub, washed and dried as your measuring guide)

  • 1/4 tub milk (use the empty double cream tub, washed and dried as your measuring guide)

  • 1/2 tsp Elchi (Cardamom)

  • 1/4 tsp Jaifar (Nutmeg)

  • 1 pinch of Kesar (Saffron)

Method

  • Mix all of the ingredients above in a big glass microwaveable bowl

  • Put the bowl in the microwave on the highest heat setting (mine is 900) for 2 minutes

    • Remove bowl from microwave and stir the mixture

    • Repeat this action (microwave and stir) another 3 times

  • Put the bowl back in the microwave on the highest heat setting for 1 min

    • Remove the bowl from the microwave and stir

    • Repeat this action (microwave and stir) another 3-4 times until the mixture looks and feels like a smooth buttery mashed potato

  • Remove the mixture from the microwave and leave to cool until just slightly warm

    • With the mixture warm to the touch, shape as you wish and leave to cool on parchment paper

    • Refrigerate once cool (or eat them all!)
